Meal ideas: So many things to do with courgette: soup, stir fry, pasta sauce etc. A nice summery idea is to cut one length ways and scoop out some of the flesh, then fill it with a stuffing of your choice: rice or couscous with mixed vegetables works well: wrap this in foil and pop it in the oven or on the BBQ. With the leftover flesh, try looking up a recipe for mutabal kousa, a delicious Middle-Eastern dip!
